I came across Happy Veggie today at the Mall Bang Khae. Among the food for sale was herb salad, mixed rice herb salad, roasted tofu and mushroom with herbs, shiitake mushroom ball, and Thai style mushroom salad.
The booth is opposite the supermarket counter.
